There are so many sauerkraut and spare rib recipes out there, most of which call for apples and sometimes potatoes.
But for us lovers of sauerkraut, this recipe is simple with just 2 main ingredients and spices, keeping it quick and easy to make. Yet, it's delicious and hearty.
Ingredients for this Simply Sauerkraut and Country Style Spare Ribs:
- 6 medium size country style spare ribs or 4 large ones, washed
- 32 oz (2 pds) fresh sauerkraut sold in bags (not that canned stuff!)
- Salt and crushed pepper corns
- Allspice (optional)
- Caraway seeds
- 3/4 cup of white wine, like a nice Chardonnay
Season ribs on all sides with salt, crushed pepper corns and allspice (optional). Place in a large skillet, preferably a deep skillet. Drain juice from sauerkraut. Cover the ribs with the sauerkraut. Sprinkle caraway seeds over sauerkraut. Season with salt and crushed pepper corns. Pour wine over the whole mixture.
Cover the skillet. On stove top bring the ingredients to a boil, then lower the heat. Simmer for 1-1/2 to 2 hours until ribs are tender.
