Three-Fruit Extra-Thick Smoothie

It's summertime and fresh peaches are everywhere from farmers' markets to grocer stores.  That's when a fresh, extra-thick smoothie seems to really taste best.  And that's what this recipe is all about:  summer harvested peaches and strawberries.  A banana pumps in more flavor. Lemon juice brightens the taste and honey adds more gentle sweetness.  

This thick refreshing and I must say delicious smoothie is finished with chai seeds and a drinking straw carrying a slice of a fresh peach and a strawberry.  I did have to use a spoon to get those last drops of the smoothie.

"Chia seeds come from the desert plant Salvia hispanica, a member of the mint family. Salvia hispanica seed often is sold under its common name "chia" as well as several trademarked names. Its origin is believed to be in Central America where the seed was a staple in the ancient Aztec diet. The seeds of a related plant, Salvia columbariae(golden chia), were used primarily by Native Americans in the southwestern United States.

Chia seeds have recently gained attention as an excellent source of omega-3 fatty acid. They also are an excellent source of fiber at 10 grams per ounce (about 2 tablespoons), and contain protein and minerals including iron, calcium, magnesium and zinc.

Emerging research suggests that including chia seeds as part of a healthy diet may help improve cardiovascular risk factors such as lowering cholesterol, triglycerides and blood pressure. Tool needed for this three-fruit extra thick smoothie:  a blender with a wide mouth bottom  (It takes a life time or it feels like one to blend all of the frozen fruits together in a narrow mouth blender.  Believe me, I tried it!)

Here's an image of my trusty Kitchenaid wide-mouth blender that I bought 10+ years ago.  Recently, I had purchased a narrow-mouth blender of another brand (for some in sane reason!) and the blending did not go well.  Anyway, I'm back to using my trusty Kitchenaid blender for smoothies.

The Recipe (yields 24 ounces)

Ingredients:

  • 2 - Fresh Peaches, core removed and sliced, preferably frozen
  • 3/4 Fresh Strawberries, medium sized and frozen
  • 1/3 Fresh Juice from a lemon (1 lemon
  • 3 Tablespoons of honey
  • 1 Whole Banana, frozen
  • 3 Ice cubes (if serving right away or to reduce thickness)
  • Chai seeds for garnish

Preparation:

Add all ingredients in the order listed above.  Blend all ingredients for nearly a minute or until the bananas have blended.  If you decide to add the ice cubes, add them after blended the other ingredients and use the chop option.

Note:  To ensure that the smoothie is really thick, it's important that at least 2 of the fruits are frozen.  During summer months, I always purchase large quantities of the fresh season fruits.  Then wash, pat dry as much as possible and/or slice, then store in the freezer.  Also, adding the liquids between adding the frozen fruits aids in making the smoothie thick.
